Whoever first said ‘Act Local, Think Global’ must have had husband and wife team Marcin and Magdalena Kopec who own Dingle Sushi in mind.
The couple, who are originally from Poland, create hand-made colourful, delicious sushi using Kerry fish and seafood in the Dingle Gaeltacht with the support of Údarás na Gaeltachta. Each of their hand-crafted sushi look like little portraits of the Kerry landscape. They won local acclaim with a Blás na hÉireann ‘Best in Farmer’s Market’ award in 2015.
With their sushi boxes selling in SuperValu stores from Killarney to Listowel and a regular following at local farmer’s markets, they have just set up a larger kitchen to cater for the increase in demand.
